Over 600 casks from centuries ago are still producing Balsamic Vinegar, guarded in the attics of the Acetaia Giusti, open to enthusiasts from all over the world.
Aging in casks is the most important phase of the production process of Balsamic Vinegar: the older the barrel, the better the balsamic vinegar will become, as the intensity of the essences of the wood in the balsamic vinegars left to age increase over time. This is why the heart of our vinegar production is in a cellar of 600 casks dating back to the 18th and 19th centuries. Here we obtain the purest liquid extractions, responsible for the unmistakable aroma of all the Giusti Balsamic Vinegars.
The visit to the Ancient Acetaie is part of the guided tour of the Giusti Museum, open every day, reservation recommended.
